Residuos vegetales generados en plazas de mercado: alternativas para su valorización en la obtención de metabolitos de interés industrial

Waste biomass generation, such as plant waste,is one of the environmental problems with a major impact, and frequently, their use strategiesare focused on obtaining products such as biofertilizers, compost,or animal feed. The area trend has shown that the biorefinery processes of residual biomass havebecome a strategy that, within the framework of the circular economy, can valorize these wastes by obtaining biomolecules of greater interest for their application in different industrial sectors, generating added value to the processes where these wastes are generated. This review aimsto present different alternatives for usingvegetable waste generated in marketplaces to obtain products with industrial potential. For this purpose, a bibliographic search was carried out in databases with a restriction of terms associated withthe topic of study, which were classified according to their application in obtaining different products, finding that among the alternatives of use, the use of these wastes for the elaboration of substrates in microbial enzymesproduction, andbiomolecules such as polyphenols, carotenes, lycopene, vanillin, pectin, colorants and products such as essential oils, is presented.
