The SNP (g.77807325 G>C) of BGN Gene and its Association with Flavor Odor in Lamb Meat
Abstract The Biglycan gene (BGN) is predicted to play an essential role in determining flavor odor in lamb meat. This study aimed to identify BGN gene polymorphisms and their association with flavor odor in Indonesian lamb meat. A total of 65 Indonesian male lambs were sampled. BGN gene polymorphisms were analyzed using the Polymerase Chain Reaction-Restriction Fragment Length Polymorphism (PCR-RFLP) technique with the HinfI restriction enzyme. The association of BGN gene polymorphisms with flavor odor was evaluated using PROC-GLM. The analysis revealed that the BGN gene was polymorphic and showed GG and CC genotypes. The BGN gene was significantly associated with flavor odor, including 4-ethyloctanoic acid (EOA). The GG genotype is recommended for sheep with low flavor odor. The BGN gene (SNP g.77807325 G>C) can serve as a potential genetic marker for molecular-based selection in sheep for flavor odor. This provides a scientific basis for future genetic improvement strategies in sheep breeding programs in Indonesia.
