Physicochemical, Nutritional, and Pharmacological Properties of Persimmon (Diospyros kaki)
Diospyros kaki , commonly known as persimmon, is a sweet, edible fruit-bearing tree belonging to the Ebenaceae family. This fruit thrives in warm climates and is often cultivated as a shrub. Not only is it prized for its taste, but it is also renowned for its health benefits, owing to its medicinal properties. The present study focuses on this fruit’s physicochemical, nutritional, and antinutritional properties. The investigation into its nutritional and antinutritional composition revealed significant levels of beneficial compounds, including flavonoids (6.66%), vitamin C (0.08%), tannins (4.1%), polyphenols (3.4%), vitamin E (0.7%), lycopene (0.15%), and beta-carotene (0.25%). These findings highlight the exceptional nutritional profile of * Diospyros kaki *. From a biological perspective, persimmons have been traditionally used to address various health conditions, particularly cardiovascular disorders such as stroke and hypertension. Its strong antioxidant properties are attributed primarily to its high molecular weight tannins, which play a pivotal role in preventing heart diseases. Additionally, these compounds help mitigate oxidative stress caused by reactive species, metabolic disorders, and even cancer. In conclusion, this study demonstrates the rich nutritional profile and significant medicinal value of Diospyros kaki, affirming its role in promoting health and preventing diseases.
