Study of the Fouling in Plate Heat Exchangers during Milk Treatment using 3D Dynamic Model

Heat exchanger fouling increases production costs across a number of industries. In this study, a mathematical model is developed, and a thorough simulation of a plate heat exchanger (PHE) with milk fouling in three dimensions is performed (3D). The model uses direction-specific flow and energy dynamic equations in the x, y, and z axes to forecast milk flow properties and the PHE surface. The temperature of the milk and the thermal fouling resistance that has developed inside the channels are measured using a plate heat exchanger with counter-current flows. Unflexed protein clumps exponentially as the temperature of the PHE region rises, and thermal fouling resistance also dramatically increases. Depositions of heat-denatured beta-lactоglоbulin (_Lac) along the x, y, and z axes of a channel's interior contribute to fouling and, in turn, raise drop pressure by reducing the channel's hydraulic diameter.
