Acceptability of Mansanitas (Muntingia calabura) Fruit as Syrup

This study aimed to produce the Manzanitas (Muntingia calabura) Fruit Syrup as an Alternative remedy for Diabetes. Specifically, this study sought to answer the following: (1) What is the acceptability of Mansanitas (Muntingia calabura) fruit syrup as an alternative remedy for diabetes through the Hedonic Rating Scale regarding appearance, aroma, taste, and texture? (2) Is the Manzanitas (Muntingia calabura) fruit syrup as an alternative supplement recommendable through the Descriptive Rating Test in terms of appearance, aroma, taste, and texture? The researchers used sensory evaluation to evaluate the product, wherein 20 selected individuals from the St. Paul University Surigao community participated, including students and TLE teachers. To carry out the data collection, this study used a research-made questionnaire for gathering data, which consists of two parts. A descriptive rating test and hedonic rating scale assessed the product's characteristics. The findings indicate that the syrup's visual presentation and sensory attributes significantly influence consumer acceptability, suggesting that the product's appearance plays a crucial role in its marketability. The study results demonstrate that Muntingia calabura syrup is not only a viable alternative remedy for individuals with diabetes but also possesses favorable sensory qualities that enhance its appeal. Overall, this research contributes to the growing body of evidence supporting the use of fruit syrup in diabetes management, emphasizing the need for more accessible and natural treatment options.
