Watery Rose Apple (Syzygium aqueum) as Gummy Supplements

Consumers looking to improve their quality of life. Gummy vitamins offer a tasty and enjoyable alternative to traditional tablets and capsules, making them popular for children and adults. This study examined the watery rose apple (Syzygium aqueum) as a potential new source for gummy supplements due to its high levels of vitamins, minerals, and antioxidants that promote health. This research focused on developing a gummy formulation using a quantitative developmental research design. The study evaluated the gummy's basic nutritional composition and sensory attributes among participants. This study employed an adapted research questionnaire from Lawless & Haymann 1998, containing the Hedonic Rating Scale and the Descriptive Rating Test. This study used Purposive Sampling Technique to choose the participants based on their expertise and experiences in food, identifying fifteen (15) participants, consisting of seven (7) Canteen Staff, five (5) TLE teachers, and three (3) consumers, chosen as evaluators. Moreover, the result indicates that the gummy is accepted in terms of appearance, aroma, taste, and texture, with an overall acceptability rating of "Like Moderately." The nutritional analysis revealed that the gummies are a rich source of protein, boasting a content of 24.8%, and provide substantial energy with 21.3% carbohydrates, with a low cholesterol content of 5.58 mg/100g, making it suitable for health-conscious consumers. Furthermore, additional research is recommended to conduct studies on the effectiveness of gummies developed from watery rose apples.
