Potential Bioactivity of Carrot (daucus carota L) as a Health Protector Through Antioxidant, Antibacterial, and Antifungal Activities
Carrot is one of the most popular plants in Indonesia. This study aims to investigate the bioactivity of carrot extract which includes antioxidant, antibacterial and antifungal properties. The method used in this research is the DPPh method which is used to determine antioxidants and dish discs to determine antibacterial and antifungal activity. Phytochemical screening and FTIR were used for characterization. The extracted carrot yielded a 10.1% (v/w) result. Based on the results of phytochemical screening, it is known that carrots contain flavonoids, saponins, tannins and alkaloids and functional groups indicating the presence of beta-carotene content in carrots. Carrots showed weak antioxidant activity and the most effective concentrations for inhibiting bacteria and fungi were 80% and 100% respectively.
