Innovative use of chitosan /PVA/GE/ZnO biofilms based on Sage nanoemulsion for sustainable antimicrobial packaging of chilled chicken meat parts

Abstract The objective of this study was to investigate the impact of bionanocomposite films, which manufactured from chitosan (CS), polyvinyl alcohol (PVA), and gelatin (GE) at concentrations (60:30:10% (v/v)), incorporated with Sage nanoemulsion (Sg-NE) and zinc oxide nanoparticles (ZnO-NPs) on chilled poultry meat parts, over a storage period of 12 days at (4 $$\:\pm\:$$ 2 o C). Transmission electron microscope (TEM) was used to assess the morphology of nanoemulsion and nanoparticles. Dynamic light scattering (DLS) was used to assess the particle size for Sg-NE. Moreover, the prepared CS/PVA/GE/ZnO/Sg bionanocomposite films were evaluated using FTIR, XRD, and SEM. Additionally, water transmission rate (WVTR) and oxygen transmission rate (OTR), thermal and mechanical properties were examined and testing their antimicrobial effect on the chilled chicken meat parts. The obtained results showed that bionanocomposite have prolonged the shelf life of refrigerated chilled chicken meat until 12 days of storage. As well they exhibited a bactericidal effect on the food pathogenic microorganism, Salmonella Typhimurium, while revealing a slight effect on Listeria monocytogenes throughout the storage period. Moreover, the fabricated CS/PVA/GE/ZnO/Sg bionanocomposite films showed a synergistic influence between Sg-NE and ZnO-NPs, which improved the characteristics of bionanocomposites film and can be used as good candidate for packaging chilled chicken meat parts.
