Thermal Monitoring with IoT in Supermarkets in Parintins-AM: Impacts on Food Quality

Introduction: This study aimed to develop a temperature monitoring system for food storage in two supermarkets located in the city of Parintins, Amazonas. The research was structured in two stages: the development of the system based on microcontrollers with integration with Internet of Things (IoT) technology, followed by the application and evaluation of the model in real storage environments. This is an applied research, with a qualitative approach and a case study design. The results obtained demonstrate that the collected data presented stability and allowed precise and continuous temperature control, without registering variations that would compromise the integrity of the stored products. In view of the analyses performed, it is concluded that the developed system is technically effective, with potential for replication and adaptation to different logistics contexts in the food sector, contributing to the improvement of food preservation and safety processes. Objective: The objective of this study is to investigate thermal monitoring with IoT in supermarkets in Parintins-AM, in order to evaluate its impacts on food quality. Theoretical Framework: This topic presents the main concepts that underpin the research. Cold storage stands out as an essential method for maintaining food quality and the Internet of Things (IoT) as a key technology for automated and continuous temperature monitoring. Method: The methodology adopted for this research comprises a case study with a qualitative approach and applied nature, carried out in two supermarkets in Parintins-AM. The system was developed with microcontrollers integrated with IoT technology. Data collection was performed through continuous monitoring of the temperature in the food deposits, using sensors connected to the system, allowing real-time analysis of the storage environment. Results and Discussion: The results obtained revealed that the thermal monitoring system presented stable performance, allowing precise and continuous temperature control in the warehouses, without variations that would compromise food quality. The discussion section highlights the effectiveness of IoT technologies in cold storage and their positive impact on food safety. Possible limitations, such as the need for adequate infrastructure and operational variations between supermarkets, are also considered. Research Implications: This research contributes to the field of technology applied to food safety, demonstrating the feasibility of using IoT in thermal monitoring of storage environments. Its implications reach areas such as supermarkets, food logistics, quality control and conservation, pointing out ways to increase efficiency and reduce losses in the food sector. Originality/Value: This study contributes by applying IoT to the thermal monitoring of food in supermarkets, an innovative and little explored approach. Its value is evidenced by the possibility of improving food preservation and reducing losses in the food sector.
