THE DEVELOPMENT OF A TEST SYSTEM BASED ON ENZYME IMMUNOASSAY FOR CONTROL OF COW'S MILK CASEIN IN FOOD PRODUCTS
The article describes approaches to developing a test system based on enzyme immunoassay, stages of monoclonal antibody production, testing them for sensitivity and cross-reactivity with milk proteins of other animal species (horse, camel, goat). During the study, an antibody was selected as the basis for the test system, and a conjugate was selected. It was proven that this pair (antibody - conjugate) most accurately allows identifying the concentration of casein in the studied sample of the dairy product. Tests were conducted on the performance of the test system based on the selected antibody, the ratio of casein concentration / optical density was identified to create an equation that allows determining the concentration of casein in the studied sample. Instructions for using this test system have been developed.
