Performance Improvement Model Integrating Lean and Internet of things: AFoodProductionCase

The food industry in Peru faced problems such as low yield, which increased production costs. Controlling and improving performance was essential for companies in the food sector, as they directly impacted production costs and efficiency. These problems were extensively studied by researchers, who developed various strategies to address low yields in production. Given the increase in demand for packaged and processed foods, it was crucial to find innovative solutions that improved performance and facilitated digital transformation in the food industry. This article provided an innovative solution model by simultaneously implementing Lean tools such as SMED, Kanban, and 5S, along with Industry 4.0 technologies such as IoT. The validation was carried out through a pilot scheme in a food company. The results included an increase in throughput to 82%, an increase in quality to 85%, a 35% decrease in setup time, and a 3.8-minute reduction in travel times. These results showed significant progress towards closing the expected performance gap and demonstrated the applicability of this methodology in other similar contexts. With continued improvements and full implementation, the performance gap was expected to be completely closed. It is worth mentioning that the participation and commitment of the workforce were crucial to achieving these objectives.
