[Diet within planetary boundaries : what are the health benefits ?]
Food, a major determinant of health, is also at the heart of environmental issues. Climate change, massive use and pollution of water and soil resources, and declining biodiversity are worrying. The EAT-Lancet Commission developed a "planetary health diet" in 2019 to provide food for the world's population while respecting the planet's boundaries. The various health benefits of this diet, as reported in the scientific literature are presented in this article. Large-scale studies show a reduction in cardiometabolic diseases, certain cancers and mortality. This evidence holds great promise for improving not only our health but also that of our planet.
