Mackerel Tuna Fish Nugget as a New Innovation to Fishery Product in Kandangsemangkon Village

Kandangsemangkon Village is one of the potential fishery resource villages where its sea is abundant with fish, especially mackerel tuna fish. Yet, mackerel tuna fish has mostly only been consumed as it is. This is because the community generally lacks knowledge and skill in food processing innovations. This paper discusses innovative ways of producing mackerel tuna fish nuggets as an innovation in the processing of fishery products. It further diversifies the usages of mackerel tuna fish and boosts the community's capacity in food processing skills and knowledge. The activity took place on August 23, 2023, and involved the women residents of Dengok Hamlet, Kandangsemangkon Village, Paciran Subdistrict, Lamongan Regency. Three methods were employed in this activity: demonstration, practice, and discussion. The result showed that the participants successfully made mackerel tuna fish nuggets and thus gained a new insight into processing ready-to-eat food. This current study, therefore, provides a design through this initiative for other communities who intend to increase their fishery product processing capabilities, providing a practical solution for maximizing value addition to local fishery resources.
