Diversity, Nutritional Content and Active Compounds of Red Macroalgae in Kupang Bay, East Nusa Tenggara, Indonesia

Abstract This study aimed to evaluate the diversity and nutritional content of red macroalgae in Kupang Bay, Indonesia. Sampling was conducted during low tide at five research stations: Paradiso Beach, Kelapa Lima, Pasir Panjang, Bolok, and Tabulolong. Red algae were collected and documented for identification within a 1 × 1 m area at each station. After identification, the macroalgae were cleaned and dried for nutritional analysis, including proximate composition, amino acid content, and mineral levels of calcium, iron, and potassium. A total of 12 species of red macroalgae were identified in Kupang Bay. Their protein content ranged from 4.38% to 14.85%, fat content from 0.37% to 1.41%, and carbohydrate content from 30.21% to 42.92%. The red macroalgae contained 15 amino acids, with variations in their properties. Gracilaria curticata , Acanthophora specifera , Gracilaria filamentosa , and Halymenia sp. exhibited high glutamic acid levels at 1.45%, 1.59%, 1.08%, and 1.22%, respectively. Additionally, Acanthophora fragilissima was notable for its high methionine content (0.82%).
