Assessment of the safety and quality of beef after using an immunotropic preparation
Beef is an important food product for humans. It contains easily digestible proteins, fats, microelements and vitamins. Only safe and high-quality beef should be sold in markets and stores. The resulting meat must undergo a veterinary and sanitary examination and comply with the requirements of the technical regulations of the customs union 034/2013 «On the safety of meat and meat products». A study was carried out on meat obtained from bulls whose mother cows were injected with the immunotropic drug ribotan before calving. Laboratory studies were carried out taking into account current state standards. The organoleptic, microbiological, and biochemical parameters of beef were assessed. As a result of the study, it was established that the immunotropic drug ribotan does not cause a decrease in the quality of beef and is safe.
