The impact of adhering to a more plant-based menu on food waste at Finnish early childhood education and care centres

Purpose The aim of the study was to analyse how the introduction of an environmentally sustainable and healthy menu with a lower climate impact affects the amount of food waste (FW) at early education centres in Finland. This study provides new knowledge regarding the FW amount, type and origin at early education centres. Design/methodology/approach The study started with a baseline measurement period in autumn 2021, and follow-up measurements were done in spring and autumn 2022. The purpose of the baseline period was to obtain FW data before menu changes were introduced, and follow-up periods were organized to find out the impact of the changes. The study is a part of the cluster-randomized trial, which aims to develop a sustainable operating model that provides children with a healthy diet, while simultaneously reducing the climate impacts of the food. Findings According to the results, the intervention towards healthier and more environmentally friendly choices did not increase the amount of FW. Instead, the amount of FW decreased slightly, while the amount of food eaten increased. The results show that FW does not necessarily present an obstacle when moving towards healthier and more environmentally friendly food choices. Originality/value This study provides new knowledge regarding the FW research and measurement methodology at early education centres. A particularly interesting question is whether the adoption of a more sustainable menu could lead to an increase in the amount of FW.
