Research trends and hotspots of polysaccharide-based nanoparticles in the stabilization of Pickering emulsions: A bibliometric and visualization analysis

• Bibliometric analysis. • Application of polysaccharide-based nanoparticles in the stabilization of Pickering emulsions. • Publication trends, renowned authors, institutes, countries, suitable data sources, and the most cited publications. • Publications outputs and citations, Discipline categories, most productive countries/regions, the most prolific institutions, the most influential authors, • Co-citation journals, highly-cited studies, Co-citation analysis, Co-occurrence keywords, keywords with citation burst. Despite the many reported studies on the effect of polysaccharide-based nanoparticles (PNPs) on the stability of Pickering emulsions (PEs), the overall research trends in this field remain unclear. This study evaluates the research trends and hotspots regarding PNPs in PEs using bibliometric analysis. A systematic search was conducted in the Web of Science (WOS) Core Collection to identify publications related to effect of PNPs on the stability of PEs from 2004 to 2024. VOS viewer (version 1.6.20), Citespace (version 6.1.R1) and Scimago Graphica (version 6.1.R1) were utilized for bibliometric analysis. A total of 2049 publications were included. The effect of PNPs on the stability of PEs related literature has high of publications and citations volumes. The majority of literature is from China. In PEs research, Ngai T is the most cited author, Food Hydrocolloids is the most prolific journal. The distribution of keywords shows that nanoparticles were initially studied extensively, with recent research focusing on emulsifiers and emulsifying property. “Rheology”, “release”, “antioxidant”, “encapsulation”, “chitosan”, “emulsifiers” and “delivery” have been the research hotspots in recent years. Research on the effect of PNPs on the stability of PEs is flourishing. Through using bibliometric and thematic analysis, we identified its hotspots and trends. A comprehensive overview of developments and frontiers in the field for researchers and policy makers new to the field.
