An Exploratory Study on Traditional Foods and Beverages of Uttarakhand, India
Export Introduction: Uttarakhand lies on the south slope of Himalayan ranges, i.e., central Himalaya and comes under the Alpine climatic region. It is one of the richest regions in terms of crop diversity. Traditional foods are composed of locally grown ingredients, available in natural environment, and are culturally acceptable. With globalization, due to increased exposure and influence on choices, loss of traditional foods systems is leading to consequences of various disorders including malnutrition. This study is intended to explore and document the traditional foods in rural areas of Uttarakhand state. This documentation of silently disappearing traditional foods should be helpful in reviving the culture of consuming traditional foods. Methods: The present field study was conducted in various villages of Uttarakhand. Information was obtained through an open-ended questionnaire administered in Focus Group Discussions with the rural people. Secondary sources, e.g., research papers and books related to traditional foods of Uttarakhand, were also referred. Results: More than 50 traditional recipes were documented. In total, 23 major recipes among them are being presented here. Conclusion: Uttarakhand has a diverse and rich culinary heritage, deeply enrooted in its local culture and traditions. The cuisines are also influenced by the geographical and climatic conditions of the region. Traditional recipes predominantly include locally sourced ingredients such as millets, lentils, and green vegetables. To revive the golden trend of regional eating and ensure nutritional security, the wisdom of traditional and regional food practices needs to be encouraged.
