Comparative assessment of the quality of ring-shaped cracknel products

The article is devoted to the comparison of ring-shaped cracknel products from diff erent manufacturers. During the study, the packaging and labeling features of each sample were studied, and their organoleptic properties were determined in comparison with the requirements of the state standards. As an additional assessment tool, a special point scale was developed that allows for a tasting assessment. A study of physicochemical quality indicators was also carried out.
