ENZYMATIC HYDROLYSIS OF MARINE BROWN ALGAE ASCOPHYLLUM NODOSUM AND UNDARIA PINNATIFIDA: CONDITIONS FOR EFFECTIVE POLYPHENOL EXTRACTION

The article considers the process of enzymatic hydrolysis of marine brown algae Ascophyllum nodosum and Undaria pinnatifida in order to optimize the conditions for effective polyphenol extraction. Marine brown algae are a rich source of bioactive compounds, including polyphenols, which have antioxidant, anti-inflammatory and antimicrobial properties. The study focuses on the complexity of the algae cell wall, which limits the bioavailability of their nutritional components. Enzymatic hydrolysis is considered as the preferred method of cell walls destruction, which allows to preserve biomolecules structure and reduce the environmental burden compared to chemical methods. Specific enzymes capable of decomposing protein-polysaccharide complexes into more digestible forms were employed, which increases bioavailability and preserves functional properties of polyphenols. The results of the study showed that the selection of optimal conditions for enzymatic hydrolysis makes it possible to significantly increase the extraction of polyphenols from algae. The obtained data open up new prospects for the use of brown algae fermentolysates in food and other industries, offering an environmentally sustainable approach to the use of marine resources.
