Promoting Healthy Eating in Childhood: A Sustainable Business Project to Increase Vegetable Consumption Among Preschool and Middle-Aged Children through the Sustainable Business Model Canvas and 3-Phase Design Thinking in Metropolitan Lima

Currently, children do not receive adequate nutrients from vegetables because they perceive them as having a poor presentation or taste. This is since some parents do not have the necessary time to prepare vegetable-based food products that are appealing to their children. As a result, children develop diseases such as obesity or anemia due to a lack of nutrients. To address this, a qualitative study is proposed to identify the need for increased vegetable consumption among children and the amount of time parents have available to prepare more elaborate meals. This will be carried out using the 3-phase Design Thinking (DT) approach to design a suitable value proposition for implementation within a Sustainable Business Model Canvas (BMCS) to create a nutritional, tasty, and sustainable food product by using fortified Andean cereals with vegetables through eco-friendly packaging. This way, parents will have a product that can be quickly cooked and provides nutrients to their children. Additionally, the product will be evaluated through hedonic tests to validate its acceptance by children.
