Comparative Inhibition of E. coli Growth by Probiotic Lactic Acid Bacteria and Their Metabiotics
Studies have shown, that the inhibition of growth of E. coli serotypes, isolated from different sources by probiotic lactic acid bacteria (LAB), their metabiotics (protein-like substances and exopolysaccharides) depends on E. coli isolation sources, the concentration and nature of metabiotics. It was shown, that probiotic LAB strains of the Lactobacillus genus possessed higher inhibitory activity then probiotic LAB strains of Enterococcus genus. The Lactobacillus helveticus KG5, L. acidophilus 1991 and L. rhamnosus 20-12 strains were selected due to their wide spectrum of growth inhibition of different serotypes of E. coli, isolated both from sick patients and from food products. The use of these LAB in the process of curd production as bioprotective culture has shown positive results.
