The Mass Transfer Coefficient of Pseudapocryptes Elongatus Fish Dried in a Hot Air Dryer
The present work focuses on estimating the mass transfer coefficient (MTC) of Vietnam Pseudapocryptes elongatus (P-Elongatus) fish dried in a hot air dryer. The drying regime was established with 50-70 drying temperature and 0.5-1.5 m/s air velocity. The MTC was determined through the Biot-Dincer correlation. Results indicated that the moisture transfer coefficient (hm) and the moisture diffusivity coefficient (De) behave linearly with the drying temperature and air velocity.Increased drying temperature and air velocity increased the De and hm.The computed results determined that the hm of fish was in the range of 197.9610 -9 -389.4310 - m/s, and the De of fish was from 9.40210 -9 to 21.65310 -9 m 2 /s.
