Utilization of enzymatic hydrolysates from defatted rice bran as antioxidants and culture media for Leuconostoc mesenteroides

Commercial enzymes such as Alcalase, Ceremix, and Liquozyme were used to hydrolyze defatted rice bran.Among these, Alcalase was the most effective in enhancing the yield, soluble protein, and polyphenol content of the defatted rice bran hydrolysate.Liquozyme, in particular, significantly increased the reducing sugar content of the hydrolysate. The Alcalasehydrolysate from defatted rice bran exhibited higher scavenging activity against free and cation radicals compared to the untreated extract. Moreover, using the Liquozyme-hydrolysate from defatted rice bran as a culture medium for Leuconostoc mesenteroides noticeably increased the cell population and titratable acidity compared to the untreated extract, while proportionally decreasing the reducing sugars. These results suggest that enzymatic hydrolysates from defatted rice bran can serve as both antioxidant substances and culture media for lactic acid bacteria.
