STANDARDIZATION OF PRIMARY PROCESSING OF RAW MEAT PRODUCTS OF THE PIG INDUSTRY OF JSC "ALEXANDRIYSKOE"

The conducted studies of production and economic activities in the pig breeding industry of OJSC Alexandriyskoye show the main directions of the formation of standardization and optimization approaches in the primary processing of raw meat. At the same time, the highest percentage of the yield of the most popular part of pork in industrial processing - trimmed meat - 88.7%, is found in the III fatness category, the highest yield of one of the cheapest components - bones - is observed in non-standard pork (19.0–19.1%).
