NUTRITIONAL AND BIOLOGICAL VALUE OF NATIONAL DISHES OF THE REPUBLIC OF TUVA
The article presents the results of research on the nutritional and biological value of national dairy products of the Republic of Tyva. A detailed analysis of the composition of nutrients contained in the most popular products such as fermented milk drink "Khoitpak", cottage cheese product "Aarzhi", cheese "Byshtak" is given. The study was conducted not only on the quantitative component, but also describes in detail the benefits and health effects of each product.
