CARBONYL DERIVATIVES OF ADAPTED PROTEINS MIXTURES BASED ON GOAT'S MILK
The determination of carbonyl derivatives of amino acids is recognized as a specific marker of oxidative modifications of proteins. The research materials were samples of adapted infant formula based on goat's milk: "NAN GOAT Milk", "Kabrita-2 GOLD" and samples of whole, ultra-pasteurized selected goat milk "Selo Zelenoe" (JSC "Milkom", Russia). The level of carbonyl compounds was determined by the absorption spectra of dinitrophenylhydrazones, which were recorded on a UNICO 2800 spectrophotometer. To characterize the total level of carbonyl compounds and analyze the ratio of dinitrophenylhydrazones, a method for the complex assess- ment of products of oxidative modification of proteins was used. The content of carbonyl derivatives of proteins in the baby formula "Kabrita-2 GOLD" does not differ significantly from the indicators of ultra-pasteurized milk, and in the baby formula "NAN GOAT Milk" it was increased by 51.4% due to aldehyde-dinitrophenylhydrazones. Unlike aldehydes, the total content of ketone derivatives is increased both in the infant formula "NAN GOAT Milk" and in the mixture "Kabrita-2 GOLD". The induction of oxidative processes by the Fenton reaction caused a significant increase in the total amount of carbonyl derivatives of infant formula proteins of both "NAN GOAT Milk" and "Kabrita-2 GOLD". The reserve-adaptive potential of adapted milk mixtures is higher in comparison with the indicator of ultra-pasteurized milk in the NAN GOAT Milk mixture by 15.4%, and in the Kabrita-2 GOLD mixture by 22.6%. Determination of the content of carbonyl derivatives of proteins, assessment of the re- serve and adaptive potential can serve as an additional criterion for the biological value of milk mixtures for the nutrition of children.
