Effects of dietary education subjects' experiences(home, school, and mass media) and consumption ethics on university students’ sustainable dietary competency(environment, health, and consideration)

The purpose of this study is to analyze the effects of dietary education subjects' experiences (home, school, and mass media) and consumption ethics on university students’ sustainable dietary competency (environment, health, and consideration). Subjects of this study were 468 university students. The research results are summarized as follows: First, regarding dietary education subjects' experiences, school education showed the highest average, while home education and mass media presented similar average values. Gender had a statistically significant effect on environmental and health competencies. However, did not significantly affect ethical consideration competency. Second, as a result of analyzing the relative influence of related variables on sustainable food competencies, awareness of consumption ethics had the most substantial impact on environmental competency, followed by school education and home education. School education was found to have the greatest influence on health competency, followed by home education and awareness of consumer ethics. Additionally, school education had a more significant influence on ethical consideration competency than consumer ethics awareness. In conclusion, this research indicates that school education has the most significant impact on sustainable dietary competency.
