Black and white truffles as a source of neuroactive biogenic amines
This study reports the first data about content of serotonin, histamine, and dopamine in black and white truffles fruiting body based on UHPLC-ESI-QqQ-MS/MS. Here we have demonstrated that black (<i>Tuber macrosporum</i>) and white (<i>T. magnatum</i>) truffles are a source of biogenic amines. Also, we demonstrated the absence of correlation between the quality of truffles and the content of biogenic amines.
