Commodity examination of lentil puréed soup concentrate with barley malt sprout
The article presents the results of a commodity examination of food concentrates of lentil puréed soups enriched with barley malt sprouts. An assessment of the organoleptic and physicochemical quality indicators of fortified food concentrates of fi rst lunch courses is given, and their chemical composition is calculated.
