Biochemical profiling of Deproteinized Juice (DPJ) or whey from potato haulms across different varieties

This study evaluates the biochemical profile of deproteinized juice (DPJ) extracted from potato haulms across ten different varieties of Solanum tuberosum L. The research was conducted in the Department of Agricultural Biochemistry at Chandra Shekhar Azad University of Agriculture & Technology during 2023 and 2024. Key metrics analyzed included protein content, carbohydrates, ash content, ether extractives, and dry matter. Results showed significant variation among varieties. Protein content ranged from 13.33% to 16.90%, with Kufri Lalit and Kufri Ganga having the highest levels. Carbohydrates were highest in Kufri Bahar (35.10%) and Kufri Lalima (33.31%). Ash content ranged from 4.85% to 7.06%, with Kufri Kiran, Kufri Mohan, and Kufri Lalit showing the highest values. Ether extractives varied from 1.48% to 2.77%, with Kufri Badshah and Kufri Mohan being the top performers. Dry matter content ranged from 9.29% to 13.49%, with Kufri Badshah and Kufri Mohan exhibiting the highest values. These findings underscore the significant nutritional differences among potato varieties, suggesting that specific varieties may be chosen based on desired nutritional attributes for various application.
